Banana Foster Pancakes

Bananas Foster Pancakes

Seven Eleven is a fun day in our home.  Its a birthday night!!  I wanted fix my husband something that he would enjoy, so I prepared a salad with grilled shrimp.  I then thought all day what would he really like.  He loves pancakes, did I say he loves that is an understatement!  He also likes bananas foster for fun occasions.  So why not the two together.  I usually like to cook from scratch but I read that jiffy mix is good so I thought why not. 
So here is what I came up with for dessert.  It is a winner and the family has asked me to make it for them when we are together.


Bananas Foster Pancakes
1 box jiffy baking mix (make according to the package)
3 tablespoons of sugar 
1 teaspoon of vanilla

Make the pancakes with these ingredients added to the mix ( I learned this trick of sugar and vanilla from a minister that was in charge of pancake dinners).   Cook according to the directions.

Bananas Foster
( similar to Commander's  Palace in New Orleans)
1/2 stick butter
3/4 cup brown sugar
3 tablespoons Creme de Banana
1 1/2 tablespoon rum

In a non-stick or iron skillet melt the butter very slowly medium heat.   Slowly add the brown sugar and whisk together not letting the sugar burn.  Add the Creme de Banana to the sugar and butter and whisk gently making sure that the liquid doesn't make the sugar and butter separate.  Then in the center of the mixture slowly pour the rum in the middle and light it with a match or lighter.  Whisk the mixture until the flames go out.  

Top a stack of pancakes with the mixture and enjoy!!!

They were a hit.  I text the pictures to my best critics and now they all want me to make it for them. 
It was a super big hit and is so much fun to make.  Also it is always good on vanilla ice cream.
